of their presence having existed until now. It does not only refer to sweets, whose
tradition of producing has been continued by Torun’s Kopernik company, but also to
architectural developments, which were created on the initiative of the successive
heirs of the Weese’s business. The family history begins about the mid-eighteenth
century, and is topographically connected with the house located at 20 Królowej
Jadwigi Street (formerly n Sadlarska Street and 11 Elisabethstrasse). A period of
their particular importance for the city, associated with the flourishing company
production that they ran at 4 Strumykowa Street (former Bachestrasse 4) falls on
the 2nd half of the 19th century. The year 1914 proved to be a significant turning
point, when they finally moved the production from Strumykowa Street to a modern
plant at 34 Żółkiewskiego Street (former Fritz-Reuterstrasse). With the outbreak of
World War II, the investment of the members of the Weese family totally declined
in Toruń, sealed with moving out of the town in 1944.
The documented history of the Weeses in Toruń starts in the 60s of the eight-
eenth century. In 17611, Johann Weese (born 1731 - died 1796) married the widow
of gingerbread baker Johann Samuel Schreiberze Jr - Dorota, thus taking over the
management of a small handcraft factory2. From 1763 on, gingerbread master, Jo-

hann Weese, trademarked with his name the plant he had taken over.3 It was in his
gingerbread production establishment where the famous gift to Catherine II was
prepared in 1778 - i.e. gingerbread representing Toruń’s coat of arms and the Russian
double-headed eagle with a crown.4
In 1796 Andreas Michael Weese (born ? - died 1830) took over the company after
his father’s death, having won his master’s title in Nuremberg, a city famous for
gingerbread baking, with which Toruń had signed an agreement of trade partnership
in the year 1556. Andreas ventured to make the local product famous and to search for
markets outside of Toruń (e.g. in Königsberg, Warsaw and Gdansk). For this purpose,
the company purchased a “large vehicle” and had eight horses, aimed at the efficient
distribution of goods.5 From 1819 on, the gingerbreads of Toruń were sent to the
Prussian royal court in Berlin. The holiday tradition of giving Torun’s gingerbreads
to the royal couple survived until the end of the Prussian rule, i.e. the year 1918.
In addition to the family house at 20 Królowej Jadwigi Street, in 1806 Andreas became
the owner of the building at 8 Mostowa Street (former Brückenstrasse). At the back
of the house a medieval granary was located (present 7 Podmurna Street), where he
conducted additional production of gingerbread.
Andreas Weese married Maria Dorothea - the daughter of master baker Daniel
Gottlieb Lieblig and lived to see six children born, three sons and three daughters.
His firstborn son Carl was a recognized doctor, Gustav Traugott took over the family
business, and Ernst Adolph pursued a military career, becoming a colonel.6 After
selling the town house in Mostowa Street in December 1818, Andreas Weese continued
to run the firm in Strumykowa Street until 1824. In the same year, he leased from
the town a farm in Gostkowo, where he moved with his wife Maria Dorothea, and
he died there in 1830.7
The third manager of the company in the years 1824 to 1867 was Gustav Traugott
Weese (born 1801 - died 1874). He transformed the small craft business into a modern
company, widely advertising its products. It was a period of real prosperity. After
20 years of managing the company independently (about 1845), his fortune was
estimated at 12 thousand thalers, which placed him third among the wealthiest
residents of Toruń. Purchases of further properties in Toruń were the evidence of the
financial condition of the company. In 1836 Gustav Traugott Weese purchased the
neighbouring building at 10 Sadlarska Street, and in 1841 ֊ another one at number 9

- the former numbers 9,10,11 are all together located at 20 Królowej Jadwigi Street.
In the next stage, he also bought a free plot at 3 Strumykowa Street, as well as the
building at 5 Male Garbary Street (former Kleine Gerbergasse 5)» which served for
the production and storage of goods. Gustav Traugott was also a well-known To-
run’s social worker, chairman of the Town Council, involved in the most important
municipal projects and cultural events. He made strenuous efforts to connect Toruń
with the rail network (which finally took place in 1861), supported financially the
town’s hospitals, belonged to the committee for the construction of the monument of
Nicolaus Copernicus, and was a member of the Copernicus-Verein für Wissenschaft
und Kunst association.
Gustav Weese died on February 5,1874 in Toruń. He left three adult children. Gus-
tav Albert’s eldest son ran a medical practice. His daughter Maria Elisabetha married
district judge Coeler. In that situation, the only successor of the famüy tradition of
gingerbread baking, and the principal heir, was the youngest son - Adolph Robert
(bom 1843 - died 1875). Robert gained his professional experience in a confection-
ery company Theodor Hildebrand und Sohn in Berlin. He managed the plant in Toruń
for a very short time - only eight years (he died at the age of 328). A fragment of
his tombstone was found by accident as late as in 2013 at the Torun’s cemetery in
Antczaka Street9, i.e. the former cemetery of the New Town evangelical community.
In 1877 widowed Anna Weese remarried industrialist Friedrich Hübner, who took
the reins of the family business on behalf of the minor children until 1895. It was
the only episode in the history of the company, when it was managed by someone
from outside the Weese family. Friedrich Hübner ran the plant in a manner totally
devoted to the family traditions, multiplying its profits and building a strong brand
of products. It was proved by the honourable title of the royal supplier awarded
by Wilhelm I Hohenzollern for outstanding merits for the court. Friedrich Hübner
conducted major construction projects. In 1881 he built a 4-storey eastern outhouse
of the family property at 20 Królowej Jadwigi Street, as designed by Ernst Schwartz.
He bought the backshop of the houses at 7 and 9 Male Garbary Street, as well as
a significant area in Strumykowa Street - all in order to build a new factory, which
was designed by Reinhard Uebrick. In 1885 a modern gingerbread factory Gustav
Weese’s Company at 4 Strumykowa Street was ready.
After the death of the efficient manager Friedrich Hübner in 1895, the business
was taken over by the widow Anna along with the eldest son from her first marriage.
Gustav Bernhard Weese (1869-1959) became an independent owner of the plant in
1902. He continued his predecessor’s course and bought the two buildings at 7 and 9

Małe Garbary Street - thus merging the adjacent lots, which increased the potential
for the investment and the development of the company. In 1903 the area situated
in front of the factory, at 3 Strumykowa Street, which had served for vehicle parking
area, a 4-storey storehouse was built, designed by master builder Gustav Immannsa
(until recently it had seated Orzeł cinema). At the beginning of 1911, Gustav Weese
commissioned Berlin’s architect, Paul Tropp, to design the thorough reconstruction
of houses located in Królowej Jadwigi Street, which aimed at merging the three
adjacent buildings, creating a modern area of confectionery sales (ground floor),
providing office space serving the purposes of the company, as well as convenient
housing facilities for the business owner (above the ground floor). The modern build-
ing facade of the Weeses’ house (at 20 Królowej Jadwigi Street) gave a clear signal
to the town residents and to the potential partners about the general condition of
the company, which presented itself as very impressive. In 1905 Weese’s company
took over the gingerbread factory A.Krantz-Successors in Halle (on the river Saale,
Saxony-Anhalt),10 11 and the branch was managed by Gustav’s brother - Max Albert.
At the turn of the century, the Weeses’ company had two commercial branches in
Gdansk and Königsberg, 13 representative offices for wholesaling in Europe, whereas
non-European gingerbread recipients were in China and Japan.
In 1909 Gustav Weese decided to build a new factory at the present 34 Żółkiew-
skiego Street. It not only fitted well in the company’s development strategy but also
in the urban development plan, which envisaged the relocation of production facilities
from the cramped Old Town to the suburbs of Jakubskie. The process of moving the
production of Weese’s gingerbreads to the new factory was completed in 1914.
With the business investment, Gustaw Weese undertook the construction of
a private house in the suburbs of Przedmieście Bydgoskie - a district in the western
part of Toruń. He ordered the project with the Thuringian studio Saalecker Werkstät-
ten in Saaleck, run by Prof. Paul Schultze-Naumburg and Dr. Friedrich Carstanjen.
The villa at present 6 Danielewskiego Street was opened in 1911. This took the form
of a classicistic baroque with distinctive modernist features, characteristic of the
early twentieth century. It was picturesquely situated on a slope with a view of the
Vistula river inlet and of the nearby City Park in the English style. The villa was and
still remains one of the most beautiful examples of housing development in Toruń.
At the outbreak of the First World War, the functioning of the company ex-
perienced a serious downturn. Also, after the war, the competition from smaller
confectionery plants increased-during the twenty-year interwar period, the number
of new master confectioners in Toruń amounted to 65й, and, what is more, the old

competitors proved to be impossible to ignore, especially the companies run by
Hermann and Richard Thomas, Jan Ruchniewicz and Julius Buchmann.
It seems that as early as in 1920 - i.e. the moment Toruń became part of Poland
again, and in the face of the growing competition, as well as the production of sweets
being dispersed for small local establishments - the Weese family was looking for
new solutions in order to save their own company with its long tradition of 150 years.
But their ideas no longer focused on Torun only, as evidenced by the fact that in 1925
the brothers Gustav and Max founded a new factory in Berlin.12 The decisions taken
shortly before the outbreak of the Second World War proved to be the confirmation
of their intentions to withdraw business from Toruń.
In 1939 Gustav Bernhard Weese finally decided to sell the factory to Związek
Sprzedawców Spożywczych Społem (Społem Food Retailers Association) for the sum
of 500 thousand zlotys, half of which was channelled to the repayment of a bank
loan and to the mortgage debt. However, with the outbreak of the Second World War,
Weese* s fortunes intertwined with the company again. By decision of the German
authorities, occupying Toruń, the management of the plant was entrusted to the
former owner, and in November 1940, the family house in Elisabethstrasse saw again
a bronze Gustav Weese inscription hanged on its façade, along with a distinctive logo,
known from the company* s letterheads.13
In 1944 Gustav Weese finally moved from Toruń to Holstein near Hamburg, where
his son continued the family tradition.14 In 1951 the plant at 34 Żółkiewskiego Street
was called Fabryka Pierników i Wyrobów Cukierniczych Kopernik (the Factory of Gin-
gerbread and Confectionery Kopernik), and after the Second World War, the deserted
villa in the suburbs of Przedmieście Bydgoskie was bequeathed to the authorities of
the newly established Nicolaus Copernicus University.
