The Mill and Brewery in Plasy. A guide through the Buildings and History of a Former Monastery. In 2014, the National Technical Museum had opened in the buildings of former production facilities of a dissolved monastery in west Bohemian Plasy its new branch called Centre of Building Heritage. To house this new branch, the museum had, among other things, renovated a compound including a former monastery mill and buildings of the brewery. In the course of preparation and realisation of the project, the staff made a number of interesting discoveries about the history of these buildings. This publication is thus not just an overview of history of these objects: it also presents discoveries made on the basis of archaeological and speleologi cal research and investigation into the buildings' history and past renovations. During the Middle Ages and the Baroque, the Cistercian monastery in Plasy was one of the most important monastic compounds in the Kingdom of Bohemia. Cistercians followed the rule of St. Benedict and one of its precepts, ora et labora [pray and work], had a significant im pact also on the practical aspect of lives of medieval monks. A mill and a brewery were part of the standard equipment of the service parts of monasteries, which focused on crafts and pro duction. One can safely assume that both the mill and the brewery started operating soon after the monastery was founded in mid-12th century by Vladislaus II, Duke and King of Bohemia. Its promising development was in the 1420s interrupted for a long time by the Hussite Wars: for the next two centuries, the
monastery lay in ruins, although a small monastic community still lived and worked there. First written references to a mill and brewery in Plasy come from shortly after mid-16thcen tury. They provide some ideas about the state of the monastery's economy at that time. The ear liest depictions of the monastic compound in which one can identify the service buildings date to the 17th century. During the Thirty Years' War, lands were returned to the monastery by impe rial restitution, which led to a revival its prosperity and enabled new development. From mid-17th century, we have reports about the functioning of the mill, a related sawmill, and repairs done to the beer brewery. It is likely that the so-called 'old malt house' was built around this time. An ex tensive rebuilding of the production base of the Plasy monastery took place in the last decades of the 17th century. A century later, in 1785, the monastery was dissolved, and its possessions appropriated by the state Religious Fond. A number of vedutas and several plans which include the compound of the mill, brewery, and malt house, date to the same period. In 1826, the Plasy estate was purchased by the Austrian Chancellor Prince K. W. L. Metternich-Winneburg. At this time, the state of the brewery and the mill was documented in the oldest detailed building plan, from which we can glean a detailed notion of functioning of these operations. In 1868-1869, the brewery had undergone the first large reconstruction aimed at its industrialisation. A crucial turning point came with a large fire, which in 1894 destroyed the
old malt house. Administration of the estate then went on to prepare a new strategy of functioning of the 210
brewery compound and over the following years built the requisite facilities. In 1898-1900, the brewhouse was therefore gradually modernised and a new malt house and cold-ageing fa cilities (lager cellars) built. In 1908, the boiler room was expanded, and the construction of the new brewery compound was completed in 1912 with the building of garages, which belong to the oldest facilities constructed specifically for this purpose. Plasy beer was very popular, and the annual production ranged around 30,000 hl. After the Second World War, property of the Metternich family was confiscated, and the brewery nationalised. Beer production did, however, successfully continue. Although demand for the beer continued to be high, the brewery was in 1966 closed. Its buildings, including the mill, were handed over to the Jednota consumer cooperative, which rebuilt them in 19691970 to serve as a large storage facility for village shops and a soda factory. This was the function of the former brewery compound until the last decade of the 20th century. In 1995, the entire compound of the former Plasy monastery, including the buildings belonging to the former brewery, was declared national cultural heritage. At the beginning of the new millennium, the compound was for sale. At this time, the Na tional Technical Museum started thinking about creating a reference collection of building ele ments, constructions, and materials that would be accessible to the public in a suitable listed site. In 2008, ownership of the brewery passed to the state and subsequently, the museum prepared a project
called Centre of Building Heritage in Plasy. With support from EU funds, the compound was restored and converted to suit exhibitions of the new museum of building heritage. In collaboration with a local entrepreneur, it also became possible to restart, within this site, production of the local Plasy beer. |
