SUMMARY
Data obtained by joint efforts of archaeobotanists and
archeologists over the past few decades has allowed to answer the
questions about where and when the first cultivated plants appeared
on the territory of Ukraine, to what plants was given preference
during the different historical epochs, and to establish, when the
assortments known today were first used. This book is devoted
to these questions. It is based on extensive research and factual
findings. The author has studied thousands of ceramic fragments,
hundreds of kilograms of charred grains and seeds obtained
directly from field work in most cases. This is the first generalized
edition, which looks at the history of development of cultivated
plants throughout almost eight millennia - from the Neolith (YI -
Y thousand BC) to the Middle Ages, over a large territory from the
Carpathians in the west to the Don river in the east.

The book includes findings about the primary grain crops that
were grown on the territory of Ukraine since the time of their
appearance here. Today few know in Ukraine about the hulled
wheats (polba), although in the past they had been the basic grain
crops for millennia. Even as recently as the beginning of the 20th
century, crops of hulled wheats could be found in Crimea, the
Carpathian region, the Volga river basin. Hulled wheat has been
referred to as “reliable bread” due to being undemanding toward
different soils and resilient to inclement weather. Kasha from
hulled wheats was a common part of the diet in those times.
In recent years research has shown conclusively that the
replacement of hulled wheats with naked wheats— presently the
most widespread type of wheat in the world—occurred at the end
of 1000 BC - at the beginning of AD. Naked wheats appeared in
southern Ukraine, on the northern coast of the Black Sea with the
arrival of Greek colonists, and later, in the Middle Ages, along with
rye became one of the leading crops.
Modern archaeobotany data shows that now hulled wheats have
started to draw attention as a source of healthy nourishment.
Ancient recipes for the preparation of various dishes with hulled
wheats are included here.
In the book the author has corrected many erroneous
assumptions, such as the notion that millet, a well-known grain in
the diet of Ukrainians became prevalent only after the appearance
of Scythians; or that Greek colonists brought with them buckwheat,
as some archeologists have written. Thanks to archaeobotanical
plant researches we now know that buckwheat appeared in Europe
in the Middle Ages and it came here from China, where it was
domestication in IY - Y centuries BC.
The book contains good illustrative material. Botanists, plant
growers, archeologists and historians are sure to discover valuable
findings in these pages.
