Resumé
This study deals with the processing of a set of
1472
completely preserved
and reconstructed pottery artefacts from High and Late Middle Ages. These
artefacts are from the museum s old portfolio and from cesspits and wells
which were under examination in years
1963-1996
within the archaeological
researches of the urban area.
Within the vessel description the pottery classes were determined. The pot¬
tery
classe
determination was possible only on the basis of discoverable
features on the vessel s surface. Most of the vessels belongs to the PM201
class. Other pottery classes differed from this
classe
by their archaical pat¬
terns of Late
Hillfort
period (PM107 and PM101), the surface finish (PM2O5)
or by the surface (PM202) features, by the side thickness (PM207), by the
way of the firing (PM206), by the surface features and the way of the firing
(PM211). From common pilsen pottery
sortiment
differs the PM209
classe
„Pfeiffentoware , refferd to as a long-distance import
{Nováček
2000, 17, 19).
The relative chronology from Late
Hillfort
period to fine reduction and bur¬
nished goods is also evident in the pottery classes description.
During the study of typological features and aplications the strong¬
est
classe
seems to be the one with lips which have inner flute, identified
on
727
vessels. The predominant use between the decorations have engraved
patterns or patterns made by a tracing wheel. Worth mentioning among
the tracing wheel decorations are those made in Gothic font. This decoration
has a religious overtones
(avram, AVRAMAVM).
In pilsen surrounding was
registered a clay painted line which wasn t frequented.
With the bottoms of

vessels the technological adjusment of pouring
a sand under the bottoms is
remarcable,
even with the goods made on fast
rotating wheel. The posibility of pottery production with pouring a sand
under the bottoms on the fast rotating wheel was indeed confirmed within
the project with the undertaken experiment.
The result were brought also by following the numbers of each kind of
the vessels. The largest group are the pots
(1151
pieces), jugs were also regis¬
tered
(153
pieces), bowls
(79
pieces), lids
(47
piecs), cups
(22
pieces), burners
(11
pieces), lapms
(4
pieces), pans
(3
pieces) and one
grappen.
The quantita¬
tive representation of each form does not testify on their behalf in contem¬
porary ceramic production, more akin to their role and use in the
kontext
of late medieval household. As a part of the waste became mainly vessels
used for cooking or reheating food and beverage. So were the pots, but also

bowls, pans, lids and jugs. Apparently the way of food preparation became
the main reason for depreciation of these vessels. So called drinking pottery
(jugs, cups, kettles) and lightining articles (burners and lapms)
happend
to be in the waste layer because of the mechanical damage of the artefact.
The determination of the typology of each
vesel
forms was carried out
using the method of defining types according to the proportional relation¬
ship between the diametr of the bottom, the diametr of the lip s mouth and
the maximum diametr of the vessel on the vertical line.
Within the pots are defined

basic types in witch were determined
the other
25
variants and
5
subvariants.
The jugs comprise
8
basic types and
11
variants, the bowls have
5
types and
8
variants. Proportionately the most
types including variants were in not very numerous group of jugs. In

speci¬
mens were determined
6
basic types and
12
variants. Disproportionately
modest presence of basic types was within the lids
- 2
types, each had two
variants. Not numerous groups of burners and lamps (including one variant)
had two basic types, the pans had one type, so did the grappens.
Most attention has been payed to the measuring of the capacity of the ves¬
sels presented in the elaborated set. But only one
remarcable
groupe
has been
determined in the frame of the processing. That occured in approximately at
a quater of the cups whose measured capacity, circa
0,5
liter, responded to the
old
czech
capacity unit of one mug
(487
milliliter).
Certain capacity standar-
tization occured also at the pans
(0,7-0,8
liter), the result could be distorted
by a low number of elaborated specimens. It seems that the Late Medieval
market didn t offered (and apparently wasn t demanded)
remarcable
capac¬
ity specifications of kitchen and table pottery. This apparently occured dur¬
ing the Modern period in connection with the offer of a disproportionately
higher quality and therefore more durable pottery goods.
The analysis of the food rests was undertaken on

vessels. These food
rests were preserved on the vessel walls. In four cases was weakly and once
very weakly identified gluten, which shows grain.
Kasein,
which indicates
the presence of dairy products, was identified in three cases. In all cases
was the test of cattle beta laktoglobulin negative. On the contrary the test of
goat imunoglobulin was always positive. By the test of thermostable proteins
was in four cases indentified poultry, in one case poultry and pig together
and in one case only pork. What is interesting there were no marks of milk
or grain where animal proteins were identified. The test results also indi¬
cated that the vessels from the cesspits are less suitable for these type of
analysis than the carbonized food rests from burned situations.
