Summary
Albanian culture, as almost all other cultures in
Europe, could be said to be well consolidated and regar¬
dless its varicolored cultural essence, it is easily disti¬
nguishable as a particular and unique. Nevertheless, in¬
asmuch present time life s dynamics is great, especially
considering rapid social, economic and political chan¬
ges, it is under continuous process of changes, influ¬
ences, communications and cultural exchanges.
Albanians in Kosovo for a long time had unsatis¬
fied political status, which was reflected also in their
social and cultural status. Regardless this unsatisfying
status they succeeded to preserve very well their ethnic
and national values interlocked in each ethno-cultural
aspect, such as: language, customs, social organization,
worship and rites, behavior and worldviews and con¬
cepts, even though they could never celebrate their
values quite freely.

However, in present time (and when saying pre¬
sent time it means the postwar period in Kosovo, from
1999),
Albanians in Kosovo can do so freely, but now
they are faced by a challenge of rapid processes, of
global influences and changes. Such oncoming makes
them go through a challenging process of selecting
ethno-cultural values which would be used for their
presentation as someone peculiar as well as for their
identification and reinforcement of identity belonging.
At the other side Albanians perceptively do aspire as
much comfortable and rich life as possible offered by
modernity. And precisely these tendencies, both contro¬
versial and necessary to be able to feel fulfilled, brought
up the idea that this process might be called gloca-
lization, a process which are going through almost all
nations, regardless where they are situated, in effort to
preserve their local values, adapting them as good as
possible in a ubiquitous global flow.
A complex phenomenon such as globalization no
doubt isn t sufficient to be represented entirely through
the single observation. Aware of this, through gloca-
lization
-
a combination of the local and the global, we
had just attempted to present a new dimension of it, in a
manner of a study and-in a manner of manifestation
mode of cultural identity in its trail.
In Kosovo there are being developed number of
processes and this is comprehensive when we consider
that it is already a state, which wants to create a
particular national (state) identity within which we have
also cultural element; it is a state inhabited by parti¬
cipants of different ethnic belongings. Then, peculiarity
of Kosovo is in the fact that as a region administratively

is bordered with clear defined borders, but this is not
valid if we view it culturally and ethnically, always ba¬
sing on cultural and micro-cultural tradition (since e.g.
Albanians of Albania and those of South-western Kosovo
culturally are one, and there are other examples as well).
Finally, Kosovo is a state which with continuous and
accelerated intensity is exposed to modernization pro¬
cesses, and in this case we do see continuously advanced
flow of material goods, people and information.
The process of global development is considered
by many scholars and it is still being considered as a
threat regarding cultural peculiarities, but, in despite of
lots of truths in these claims.-there are emerging lots of
authors claiming that by continuous accentuation, ever¬
ywhere in the world, of the traditional, of what is ethnic,
what s peculiar, and identifiable among different social
groups, there is witnessed their vitality and resistance
towards such a process of global development. Such a
resistance already is obvious and is recognized by the
notion of glocalization.
Of course this process is happening in all life do¬
mains, but anyway in some domains it is more obvious.
Combination of the global and the local is pretty
much obvious in the domain of mass communication.
Local newspapers arrive to Diaspora all around the wo¬
rld. Local TV channels of different content from home
are being transmitted to new homes of Albanians
everywhere in the world. Combination of the local and
global is quite obvious in music, too. In Albanian rock
and pop music, which are considered as elements of glo¬
bal culture, can be easily distinguished local, Albanian

musical tone as well as other visual elements in the
associated video song shoots which make all this pretty
peculiar.
Furthermore, an obvious combination of the glo¬
bal and the local began to appear in some restaurants, in
which are served different traditional, ethnic food. Tho¬
se restaurants are also decorated in traditional cultural
spirit. This pretty much evident element arouse my
curiosity for more extensive research of this phenome¬
non. In order to achieve more comprehensive study, for
this work I have chosen several restaurants (which in
present time Kosovo are numerous), in which seems
that this process of intertwining the glpbal with local is
much visible and also I have tried in this selection to be
included restaurants from different parts of Kosovo.
Thus, I have selected restaurant Simphony in Prish-
tina, restaurant Liburnia in Prishtina, but also the
restaurant of the same name in Mitrovica, restaurant
Te
Xhyla in Ferizaj, restaurant Planet in the village
Kmetoc near Gjilan, restaurant Art Design in
Peja
and
two restaurants in the complex of Hani

Haraqisë/
Haraqia Inn in
Gjakovë.
Being an insider of this culture, if we use voca¬
bulary of social/cultural anthropology, I could say that it
wasn t too difficult application of very well known
method of participant observation in this field, which at
the same time generated stronger inspiration for study.
Except this method this study helped interviews
with owners of these restaurants, where as the main
issues were considered their motivations to be owners of
this particular kind of restaurant, as well as interviews of

guests, which could be divided into three categories:
1)
local guests,
2)
local gusts by origin coming in visit from
Diaspora and
3)
international gusts as temporary resi¬
dents in Kosovo.
Supportive techniques for this study were recor¬
ding of locations by video-camera, recording of some
interviews by video-camera, shooting by digital camera
and recording of the interviews by Dictaphone. These
techniques were used according to complaisance of the
interviewees. In the cases when they didn t feel god with
any of these techniques a classical interview, pen and
paper, went on.
In order of better completion of this study, beside
fieldwork, were also used lots of sources from the inter¬
net and certainly the literature of prominent authors,
such as Arjun Appaurai, A. P. Cohen, Benedict Ander¬
son,
Bronislav Malinowski, Božidar Jezerník,
David Lo-
wenthal,
Konrad Koestlin,
Orvar Lofgren,
Jonas Fry-
kman,
Ines
Pri ca,
Ukë Xhemaj,
Drita
Statovci, Rexhep
Munishi etc., which enabled also application of other
methods such as comparative, analytical and of syn¬
theses.
In order to make hypotheses and the work itself
much comprehensive this study was organized in five
chapters.
In the first chapter Culture and Identity seemed
necessary to explain and analyze some key notions
closely related with the theme and the filed of ethnology
and cultural/social anthropology, thus there were made
attempts to define clearly culture in general and tra¬
ditional culture, as well as identity and cultural identity

which again are considered as a key word in developing
the topic. Significant place in this case have also the
notions of ethnicity and regionalism as much prevailing
topics of the discipline in recent years.
In second chapter, through above clarified notions,
it was considered relevant to explain processes through
which inevitably are undergoing our society in general.
Thus, founding in different theories, there were ana¬
lyzed cultural expressions in contemporary cultural
processes , and apropos where made attempts to define
cultural process; to explain modernization and urba¬
nization as cultural processes based on the theory of
modernity and post modernity, to explicate cultural glo¬
balization as a process prevailing and analyzed in di¬
fferent social disciplines and, related to the topic, to
determine once again the relevance of the local in cul¬
tural processes .
The third chapter aimed to discuss researched
phenomenon in the field and compare findings with lite¬
rature, where as key a issue comes out intertwining of
the local and global and appearance of this intertwining
in restaurants, as a manifestation of cultural expression
and identity.
In order to do it as good as possible, there was ana¬
lyzed this interlocking named glocalization, focusing in
glocalization through food. Then there were analyzed
restaurants as a place/space where glocalization process
is realized, there were analyzed the decoration of envir¬
onments (interior and exterior), and also were analyzed
three above mentioned categories of guests, which are
seen as an actors and executers of glocalization.

In fourth chapter was thought to be discussed sho¬
rtly on cultural elements and their role in the process of
cultural identification as of elements of extraordinary
power to preserve cultural continuation and of possi¬
bility to be identified with, while the final chapter was
reserved as a synthesis of discussing on the proportion
of values: culture and ethno-culture as expression of glo-
calization phenomenon.
By this research it is testified that such vitality is
expressed in a culture of Albanians from Kosovo and it is
also very obvious in researched restaurants.
Conclusions of the research are:
a) Restaurants are a perceptible place/space where
are performed efforts of preservation and expression of a
cultural identity, regional or local, which finally is al¬
ways raised in national/ethnic level.
b) This cultural identity is highlighted through pa¬
rticular foods which are considered traditional, ethnic,
but also through inventions of tradition which do have
or don t a immediate connection with the past and the
ethnic.
c) This identity is also highlighted through the nu¬
mber of material culture elements used as a exterior and
interior
décor.
d)
This identification could be called

tings, pictures, classical musical instruments etc.), but
also of traditional culture, ethnic one, founded on a pea¬
sant/rural life, which serves as a ground and testimony
of local, regional and ethnic/national identity (traditi¬
onal ethnic food,

either rural or urban, old architectonic buildings, or ar¬
chitectonic elements etc.).
e) as a result comes out that with this expressed
identity in the restaurants are identified easily native-
born and participants of Albanian culture from Dias¬
pora, but also with this identity are being identified nati¬
ves by international guests during their visits in Kosovo.
f) As a conclusion we could ascertain also that the¬
se restaurants could be considered as transnational spa¬
ces , since here can be noticed to crossed or to be inter¬
twined different imagined borders, such as private with
public, national with international, global with local,
past with present.
d) All these manifestations are permeated with a
spontaneity, imagination, will and creativity of the
citizens themselves.
Finally it could be said that the presence of these
restaurants at a time when it is obvious that the tradi¬
tion is being threatened and the traditional ways of
living is difficult to preserve, testifies conclusions of the
number of authors that traditions are both persistent
and disrupted 44. In this persistence of survival of tra¬
dition we see, actually, to happen lots of transformations
we like or don t, we consider them authentic or unau-

thentic, but it is a fact that they, nevertheless, do happen
and carry out the function of expression for this parti¬
cular identity. As an evidence of this I ll bring up Lowen-
thal s cogitation: Patriotic zeal or private pique persua¬
de us to conform its (of the past) remnants, like our
recollection, to our needs and expectations. Most altera¬
tions accentuate past virtues to enhance our self-esteem
or promote our interests. 43.
And these interests would certainly be possible to
fulfill much better, much properly and in much effective
way if this spontaneity would be associated with greater
institutional zeal, which could be carried out in a form
of professional counseling interventions by correspon¬
ding ministries and institutions.
This study was a modest attempt to analyze a
process through which is going through Albanian cul¬
ture in Kosovo today and, taking into account new cir¬
cumstances, as a natural quest for manifestation of par¬
ticular identity in as much spontaneous way as possible.
