surface representation of the structural
model of a beta-agarase from Z. galactani-
vorans (coloured in blue) in interaction with
an
agarose
double helix (stick representation,
the colour code is yellow for carbon atoms
and red for oxygen atoms). The crystal
structure of this beta-agarase in complex with
agaro-octaoses reveals two parallel
agarose
binding sites, one located in the catalytic
groove and a second on the molecular surface
.
